CARROT CAKES

Hi dear cookers. 

A friend of mine sends me this recipe at the crack of dawn! 

It looks absolutely divine. 

Carrot cake for Sunday tea?

INGREDIENTS:

4 cups grated carrots

1 cup raisins

2 eggs

1 cups white sugar

1 cup of vegetable oil

1 tsp vanilla extract

1 cup crushed pineapple

2 cups all-purpose flour

1 tsp baking soda

1 tsp salt

2 tsp ground cinnamon

1 cup chopped walnuts

coconut is optional

METHOD :

STEP 1: Combine grated carrots with the raisins. 

STEP 2: Preheat the oven to 350° (180C). Grease or spray a round baking tin with non stick spray. 

STEP 3: In a large bowl, mix together sugar, vegetable oil, eggs, vanilla, and carrots. 

Stir in the pineapple. In a separate bowl, combine flour, baking soda, salt, and cinnamon. Stir into carrot mixture with the walnuts

Step 4: Bake for 45 to 55 minutes until a skewer comes out clean. Remove from oven and set aside to cool.

You can top the cake with cream cheese icing and garnish with walnuts.
