Chicken & Green Chili Enchiladas :

Chicken & Green Chili Enchiladas
Start with shredded chicken. I used 3 chicken breasts I braised in chicken broth with garlic, onion, black pepper, cayenne, poultry seasoning and cumin. Cook breasts for 45-50 min. Let cool and shred. I keep about 1/2 cup of cooking liquid to add to the chicken for moisture.
Enchilada Sauce
2 tablespoons olive oil
2 1/2 tablespoons flour
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1/4 teaspoon salt
Pinch cinnamon
2 tablespoons
tomato paste
2 cups vegetable broth
1 tablespoon apple cider vinegar
Salt & pepper to taste
