Divinity is my favorite Christmas candy. My Grandma Wanda was a fabulous candy maker and during the holidays I have fond memories of her kitchen counter filled with Christmas candy boxes filled with homemade candy. Last Christmas, I shared my grandma’s fudge candy recipe and grandma’s peanut crunch recipe. I didn’t have his divinity recipe, but this one tastes the same as I remember. If you’ve never tried divinity, I would describe it as a soft, sweet white nougat, a cross between fudge and a marshmallow.
* Ingredients :
° 21/2 cups sugar
° 1 cup water
° 1 cup light corn syrup
° tsp. salt
° 2 egg whites
° 1 tsp. vanilla extract
° 1 cup chopped pecans, toasted
° Decorate : toasted pecan halves
* Directions :
1. Cooking first 4 ingdts in a heavy 2 quart saucepan on low heat until sugar melted also a candy thermometer about 16 minutes . Remove syrup blending from heat.
2. Whisk egg whites at tall speed with an electric mixer until stiff peaks create . Pour half hot syrup in slim stream on egg whites, beating persistently at high speed, for 6 min .
3. Cooking rest half syrup on medium heat, stirring, until a candy thermometer about 5 to 6 min . Heavily pour hot syrup & vanilla extract on egg white blending, whisking ever at high speed until mixture holds its form . Stir in 1 cup ground pecans.
4. Fall mixture rapidly by rounded tea spoonfuls to softly greased wax paper. Decorate , if wanted . Cool .
