INGREDIENTS
- 3-4 large potatoes, peeled
- 1 lb bacon
- 2 cups cheddar cheese, shredded
- salt & pepper
- 2 stalks green onions, sliced
- sour cream, to serve
INSTRUCTIONS
- Place bacon slices on a foil lined cookie sheet in a single layer.
- Place in the oven and set temperature to 400°F.
- Cook bacon for 20-30 minutes until crisp.
- Use tongs to remove bacon from the cookie sheet and chop bacon into ½ inch pieces. Set aside.
- Dice potatoes into ½ inch cubes and spread out on the cookie sheet in a single layer.
- Toss to coat the potato cubes in the bacon fat that’s in the bottom of the cookie sheet from cooking the bacon.
- Season with salt and pepper.
- Bake in the oven for 30 minutes.
- Remove and toss potatoes with a spatula. Return to the oven for another 30 minutes.
- Once potatoes are soft, use spatula to toss once more and top with reserved bacon and shredded cheddar cheese.
- Return to the oven and bake for another 5-8 minutes or until cheese is melted, bubbly and hot.
- Serve potatoes topped with a sprinkle of green onions and a generous dollop of sour cream.
