Left Over Mashed Potato Balls

Left Over Mashed Potato Balls. If after the holidays you have left over mashed potatoes then this easy appetizer recipe is perfect. Fried to perfection.Ingredients

  • 3 cups leftover mashed potatoes or Instant mashed potatoes
  • 3/4 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • Salt according to taste
  • black pepper according to taste
  • 2 egg beaten
  • 1 1/3 cups Panko bread crumbs
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine mashed potatoes, cheese and garlic powder. Then season with salt and pepper. Stir until all ingredients are well mixed. If using Instant mashed potatoes, cook according to package directions.
  2. Place eggs and Panko bread crumbs in 2 separate small bowls. Use a small cookie scoop to scoop 1 inch to 2 inch balls of mashed potato mixture. Roll into a ball in your hands. Then dredge first in the beaten eggs, and then in the Panko bread crumbs. Repeat until all the mashed potatoes are used.
  3. Heat oil in a large frying pan until medium hot. Fry potato balls in batches, rotating until golden brown on all sides, for about 2 to 3 minutes.
  4. Drain on a paper towel lined plate and season immediately with more salt.

Serve with your favorite Ranch Dressing.
