I have seen pumpkin snickerdoodles everywhere right now and I have been dying to make them. I love anything that has to do with pumpkin. But then I stumbled upon pumpkin snickerdoodles stuffed with cream cheese. Life doesn’t get much better than that!
Ingredients:
3¾ cups all-purpose flour
1½ tsp. baking powder
½ tsp. ground cinnamon
½ tsp. salt
¼ tsp. freshly-ground ground nutmeg
½ cup light brown sugar
¾ cup pumpkin puree
1 cup unsalted butter, at room temperature
1 cup granulated sugar
1 large egg
2 tsp. vanilla extract
Filling Ingredients:
8 ounces cream cheese, softened
¼ cup sugar
2 teaspoons vanilla extract
Cinnamon-sugar coating:
½ cup granulated sugar
1 tsp. ground cinnamon
½ tsp. ground ginger
Dash of allspice
