Quick Stir-Fried Noodles

Quick Stir-Fried Noodles: A fast and flavorful dish made by quickly stir-frying noodles with vegetables and seasonings.


  • 8 ounces of pancit noodles (or any other noodles of your choice)
  • 2 tablespoons of cooking oil
  • 2 cloves of garlic, minced
  • 1 small onion, thinly sliced
  • 1 cup of mixed vegetables (such as carrots, bell peppers, cabbage, and snow peas), thinly sliced
  • 2 cups of cooked chicken, shrimp, or tofu (optional)
  • 3 tablespoons of soy sauce
  • 2 tablespoons of oyster sauce
  • Salt and pepper to taste
  • Green onions, chopped, for garnish (optional)
  • Lemon wedges, for serving (optional)


  1. Cook the pancit noodles according to the package instructions until al dente. Drain and set aside.
  2. Heat the cooking oil in a large skillet or wok over medium-high heat.
  3. Add the minced garlic and thinly sliced onion to the skillet. Stir-fry for 1-2 minutes until fragrant and the onions are translucent.
  4. Add the mixed vegetables to the skillet and stir-fry for another 2-3 minutes until they are tender-crisp.
  5. If using, add the cooked chicken, shrimp, or tofu to the skillet and stir to combine with the vegetables.
  6. Add the cooked noodles to the skillet, followed by the soy sauce and oyster sauce. Toss everything together until well combined and heated through.
  7. Season with salt and pepper to taste, adjusting the flavor as needed.
  8. Transfer the stir-fried noodles to a serving dish and garnish with chopped green onions if desired.
  9. Serve hot with lemon wedges on the side for squeezing over the noodles, if desired. Enjoy your quick and easy pancit!
