Spicy Tofu Power Bowl

Ingredients:

  1. 1 block of firm tofu, pressed and cubed
  2. 2 tablespoons soy sauce
  3. 1 tablespoon sriracha sauce
  4. 1 tablespoon maple syrup
  5. 1 tablespoon rice vinegar
  6. 1 clove garlic, minced
  7. 1 teaspoon grated ginger
  8. 1 tablespoon vegetable oil
  9. 4 cups mixed salad greens
  10. 1 cup cooked quinoa
  11. 1/2 cup shredded carrots
  12. 1/2 cup sliced cucumber
  13. 1/4 cup sliced radishes
  14. 1/4 cup chopped green onions
  15. Sesame seeds, for garnish
  16. Lime wedges, for serving

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix together soy sauce, sriracha sauce, maple syrup, rice vinegar, minced garlic, and grated ginger to make the marinade.
  3. Toss the cubed tofu in the marinade until evenly coated, then let it marinate for about 15-20 minutes.
  4. Place the marinated tofu cubes on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until the tofu is crispy and golden brown.
  5. While the tofu is baking, prepare the salad bowls. Divide the mixed salad greens, cooked quinoa, shredded carrots, sliced cucumber, and chopped radishes among serving bowls.
  6. Once the tofu is done baking, remove it from the oven and let it cool slightly.
  7. Top each salad bowl with the baked tofu cubes and garnish with chopped green onions and sesame seeds.
  8. Serve the spicy tofu salad bowls with lime wedges on the side for squeezing over the salad just before eating.
