Southern Fried Cabbage

Ingredients:

  • 5-6 strips of bacon
  • 1 head cabbage, thinly sliced
  • 1 onion, finely chopped
  • ¼ cup chicken broth (preferably low sodium)
  • 1 teaspoon vinegar (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Directions:

  1. In a large skillet, preferably cast iron, fry the bacon until it turns crispy. Remove the bacon strips and place them on a paper towel to drain excess grease.
  2. In the same skillet with the rendered bacon fat, add the chopped cabbage and onion. Sauté over medium heat until they start to soften and wilt slightly.
  3. Crumble the cooked bacon and sprinkle it over the cabbage and onion mixture in the skillet.
  4. Pour in the chicken broth and add vinegar (if using), salt, and black pepper. Stir well to combine.
  5. Cover the skillet and let the mixture simmer for about 10 minutes, allowing the flavors to meld together.
  6. Serve the Southern Fried Cabbage hot. For variation, consider adding diced apples, sliced sausage, noodles, or any other desired ingredients before serving. Enjoy!
