Pomegranate Mimosa

Classic Mimosa’s get a seasonal makeover. Ingredients

  • 1 lime sliced
  • 1/4 cup granulated sugar
  • 1 750 ml bottle of champagne dry or “Brut” and chilled well
  • 3 cups pomegranate juice
  • 6 Tbsp pomegranate seeds
  • fresh rosemary for garnish

Instructions

  • Use a slice of lime and run along the rim of each champagne flute.
  • Dip the rim of the champagne flute in the granulated sugar.
  • Fill 8 champagne flutes halfway full of pomegranate juice.
  • Fill the rest of the glasses with sparkling wine, adding more or less if desired.
  • Garnish each glass with 1 Tablespoon pomegranate seeds and a sprig of rosemary.

Notes

  • Use 100% pomegranate juice if possible. 
  • For the sparkling wine, always choose dry or “brut”.
  • Champagne, Cava or Prosecco are all excellent choices. 
  • 50/50 is the traditional ratio of sparkling wine to orange juice, but you can adjust according to your taste.
